Recipe Central: Spinach Artichoke Zucchini Bites



What a great way to control your carb intake while enjoying a delicious, fresh recipe perfect for the spring or summer season. It’s a great way to use up your remaining summer squash—or simply pick up a few Italian or yellow squash from the store. This dish is ideal for a family meal or a lively gathering with friends.

 

Artichokes are a powerhouse of nutrition—high in fiber and protein, and rich in vitamin C, magnesium, and potassium. Yellow squash, on the other hand, is low in calories and packed with manganese and vitamin C, making this combination both wholesome and satisfying.

 

Artichokes and yellow squash were featured in the produce boxes distributed this past weekend from all five C.A.M.P. market locations, giving everyone a chance to create something fresh, healthy, and full of flavor.
