Education Basket: What are Pasilla Chiles

What are Pasilla Chiles

Pasilla Chiles are properly known as a chilaca pepper (or chile negro).  In appearance they are long, narrow, and slightly twisted (6-10 inches long).  When ripe they range from dark green to a dark brown, black.  They are earthy in taste and a mild Scoville Heat Unit ranging 1,000-3,999 SHU.  Also known as the “Little Raisin” is referred to the dried form of the chilaca pepper, which is from the Spanish word because of its dark, wrinkled skin.

Fresh Pasilla Chiles were distributed at all of our 6 Community Action Market & Produce (C.A.M.P.) markets on Saturday, October 10, 2026.
