Recipe(s) of the Week: Grams Breaded Tomatoes

Another great recipe from one of our C.A.M.P. team member. Pass down by Grandma herself.
Ingredients: For Stewed Tomatoes
2 Lbs Tomatoes Chopped
1 Green Bell Pepper
2 Orange Bell Peppers
1 Onion Chopped
3 Celery Stalks Chopped
4 Bays Leaves or Italian Seasoning (Optional)
4-6 Slices of Bread

Instructions:
Add onions, peppers & celery to fry pan, season with salt & pepper to taste.
Sauté onions, peppers, & celery with butter & Olive oil until soft & translucent (ok to leave firmer if that's preferred).
Once soft & translucent add tomatoes.
Season with more salt & pepper if needed.
Saute until tomatoes start to breakdown then reduce heat to simmer.
Add sugar if needed for sweetness.
Add 4 bay leaves or Italian seasoning as an option.
Simmer until tomatoes are completely broken down.
For breaded tomatoes: add 2 slices of bread to about 2 cups of stewed tomatoes (above will need 4-6 slices).
Bread should absorb liquid, but not completely.
Add to casserole dish.
Optional: Top with bread crumbs & cheese.
Bake oven on 450 degrees until top is brown, cheese melted & sides a bit bubbly.
